Toss the prawns, half the oil and Japanese 7 Spice Seasoning together. Heat the remaining oil in a large frying pan set over a medium-high heat. Cook the prawns for 3 to 4 minutes or until they turn pink.
Meanwhile, whisk together the soy sauce, lime juice, sesame oil and honey. Toss the noodles, courgettes and dressing together until well coated.
Divide the noodle mixture among 4 bowls. Top with the prawns and garnish with spring onions and chilli.
Substitute soba noodles with rice noodles.
