A mild and fragrant Thai prawn curry flavoured with coconut and Coriander leaf.
Ingredients
  • 400 millilitre (13 fluid ounce) coconut milk

  • 2 tablespoons tomato purée

  • 2 tablespoons Thai 7 Spice

  • 2 teaspoon Coriander Leaf

  • 1 tablespoons lemon juice

  • 200 gram (7 ounce) French beans, halved

  • 4 tomatoes, diced

  • 450 gram (1 pound) cooked prawns, defrosted if frozen

Instructions

  • 1 STEP 1: Place the coconut milk, tomato purée, Thai 7 Spice, Coriander Leaf and lemon juice in a wok or large frying pan and bring to the boil, stirring continuously.
  • 2 STEP 2: Add the beans and tomatoes and simmer for 4-5 minutes or until the beans are tender. Stir in the prawns and heat through for a further minute.
  • 3 STEP 3: Serve with rice.
