Tuna & Courgette Tortilla
Heat the oil in a medium frying pan and fry the potato and courgette for 2-3 minutes.
Beat the eggs together with the water, Fish Seasoning, salt and Pepper and pour into the frying pan. Cook over a medium heat until the egg mixture is just beginning to set. Scatter over the tuna and cook for a further 1 minute or until the tortilla is golden brown underneath.
Sprinkle the cheese on top and place under a pre-heated grill until golden brown.
