Healthy Granola Bars

If you eat breakfast on the go or need some healthy snacks to break up the day, look no further. These naturally tasty granola bars, made up of oats, fruit and nuts, are sure to hit the spot. Oats are a fantastic source of energy and this recipe is a great way to get them into your diet if you don’t have time to make porridge. Mixing them up with almonds and walnuts adds a healthy protein hit as well as a crunchy texture to the bar. Finish these delights off with a teaspoon of warming cinnamon, honey and dried fruits to satisfy your sweet tooth.

  • Pre-heat the oven to 170°C, 325°F, Gas Mark 3.

  • Place the oats, flaked almonds and walnuts on a baking tray and lightly toast for around 5 minutes.

  • Meanwhile, warm the honey, butter, sugar and Cinnamon in a large saucepan, until the butter is melted. Pour in the toasted oat mixture, add the fruit and stir well until everything is combined.

  • Lightly grease and line a baking tray with greaseproof paper, then spoon the oat mixture in. Press down firmly with the back of a spoon so the mix is compacted.

  • Cover loosely with greaseproof paper and bake for 20 minutes.

  • Allow to cool in the tin and then cut into 12 bars.
