Creamy rice pudding flavoured with Bay Leaves.
75 g (3 oz) short grain pudding rice
50 g (2 oz) light brown sugar
1 pint (600 mililitre) milk
50 g (3 oz) unsalted butter (optional), cut into cubes
150 mililitre (1/4 pint) double cream
3 Bay Leaves
Pre-heat the oven to 180°C, 350°F, Gas Mark 4.
Place all of the ingredients into an oven proof dish and bake for 1 hour 30 minutes.
Allow to stand for 3-4 minutes before serving.
