75 gram (3 ounce) short grain pudding rice

50 gram (2 ounce) light brown sugar

1 pint (600 millilitre) milk

50 gram (3 ounce) unsalted butter (optional), cut into cubes

150 millilitre (1/4 pint) double cream

3 Bay Leaves
Instructions
- 1 Pre-heat the oven to 180°C, 350°F, Gas Mark 4.
- 2 Place all of the ingredients into an oven proof dish and bake for 1 hour 30 minutes.
- 3 Allow to stand for 3-4 minutes before serving.
