Couscous with Tomato Salsa
Ingredients
Salsa:
350 gram (12 ounce) tomatoes, chopped
1/2 cucumber, diced
1/2 red onion, chopped
1 teaspoon Coriander Leaf
1 teaspoon Mild Chilli Powder
2 tablespoons olive oil
2 tablespoons white wine vinegar
1/4 teaspoon sugar
1/4 teaspoon salt
pinch Ground Black Pepper
600 millilitre (1 pint) boiling vegetable stock
410 gram (14 ounce) tin chick peas, drained and rinsed
pinch Turmeric Powder
2 teaspoon Coriander Leaf
Couscous:
225 gram (8 ounce) couscous
COOKING INSTRUCTIONS
- 1 Mix together the tomatoes, cucumber and onion in a large bowl. Mix together the remaining salsa ingredients and stir into the tomato mixture. Allow to marinate for 30 minutes in a refrigerator.
- 2 Place all the couscous ingredients in a large bowl and allow to stand until all the liquid has been absorbed and the couscous is cooked. Serve with the salsa.
