  • Salsa:

  • 350 gram (12 ounce) tomatoes, chopped

  • 1/2 cucumber, diced

  • 1/2 red onion, chopped

  • 1 teaspoon Coriander Leaf

  • 1 teaspoon Mild Chilli Powder

  • 2 tablespoons olive oil

  • 2 tablespoons white wine vinegar

  • 1/4 teaspoon sugar

  • 1/4 teaspoon salt

  • pinch Ground Black Pepper

  • 600 millilitre (1 pint) boiling vegetable stock

  • 410 gram (14 ounce) tin chick peas, drained and rinsed

  • pinch Turmeric Powder

  • 2 teaspoon Coriander Leaf

  • Couscous:

  • 225 gram (8 ounce) couscous

Instructions

  • 1 Mix together the tomatoes, cucumber and onion in a large bowl. Mix together the remaining salsa ingredients and stir into the tomato mixture. Allow to marinate for 30 minutes in a refrigerator.
  • 2 Place all the couscous ingredients in a large bowl and allow to stand until all the liquid has been absorbed and the couscous is cooked. Serve with the salsa.
