  • 2 tablespoons oil

  • 450 gram (1 pound) pork fillet - cut into medallions

  • 175 gram (6 ounce) button mushrooms, sliced

  • 1 small red pepper, sliced

  • 200 millilitre (7 fl oz) dry white wine

  • 1 chicken stock cube dissolved in 75 ml (3 fl oz) boiling water

  • 1/2 teaspoon Marjoram Herb , or Basil

  • 1/4 teaspoon Garlic Granules

  • 150 millilitre (1/4 pint) double cream

  • 1 teaspoon cornflour blended with 1 tbs water

Instructions

  • 1 Heat the oil in a frying pan and fry the meat until browned. Add the mushrooms and red pepper and cook for a further 1-2 minutes.
  • 2 Stir in the wine, stock, Marjoram or Basil and Garlic Granules. Simmer gently, uncovered, for 15 minutes.
  • 3 Add the cream and cornflour paste and stir until thickened.
