Place butter and sugar in a medium saucepan on medium heat. Cook and stir until mixture turns a deep yellow colour, then in a separate saucepan, gently heat the cream and Vanilla Pod for 2 minutes.
Carefully stir the cream and vanilla into the butter and sugar mixture. Whisking constantly, cook until sauce thickens and coats the back of the spoon. You can serve this easy butter toffee sauce to pep up plain ice cream, gooey brownies or a slice of pumpkin pie.
