Sambal is a versatile Southeast Asian chilli sauce used to season stir-fries, noodles, eggs, meat, seafood and vegetables. It is also enjoyed as a sweet, sour and spicy table condiment. This fresh version, prepared in a blender, accentuates the bright flavour of the chillies and can be prepared in 15 minutes or less.
Ingredients
  • 8 red medium heat chillies, stems removed and coarsely chopped

  • 125 millilitres (4 fluid ounce) rice vinegar

  • 5 teaspoons Minced Garlic

  • 1 tablespoon Chilli Flakes

  • 2 teaspoons Sea Salt

  • 1/2 teaspoon sugar

Instructions

  • 1 Place all the ingredients in a food processor or blender. Blend until it's all coarsely chopped.
