Sambal is a versatile Southeast Asian chilli sauce used to season stir-fries, noodles, eggs, meat, seafood and vegetables. It is also enjoyed as a sweet, sour and spicy table condiment. This fresh version, prepared in a blender, accentuates the bright flavour of the chillies and can be prepared in 15 minutes or less.
Ingredients
8 red medium heat chillies, stems removed and coarsely chopped
125 millilitres (4 fluid ounce) rice vinegar
5 teaspoons Minced Garlic
1 tablespoon Chilli Flakes
2 teaspoons Sea Salt
1/2 teaspoon sugar
COOKING INSTRUCTIONS
- 1 Place all the ingredients in a food processor or blender. Blend until it's all coarsely chopped.
- 2 Store in a clean and tightly covered container or jar in the refrigerator up to two weeks.
