Vegetarian Chilli with Sweet Potato & Chickpeas
Ingredients
1 tablespoon olive oil
2 small red onions
2 cloves garlic minced/finely chopped
1 sweet potato chunked
3 carrots diced
1 pepper chopped
400 grams (15 ounces) kidney beans drained
400 grams (15 ounces) chickpeas (or mixed beans) drained
400 grams (15 ounces) chopped tin of tomatoes
250 millilitres (8,5 fluid ounce) water
1 packet Chilli Con Carne Mix
COOKING INSTRUCTIONS
- 1 In a large pan, heat up the olive oil. Add the garlic and onions and cook until softened
- 2 Add the rest of the vegetables and cook for 5 minutes
- 3 Add the beans, tomatoes, water and Schwartz Chilli Con Carne mix and mix together until the are all mixed in
- 4 Bring to the boil and then simmer for half an hour until all the vegetables are cooked
- 5 Serve with fresh coriander, rice, nachos and some guacamole
