Vegetarian Chilli with Sweet Potato & Chickpeas
Ingredients
  • 1 tablespoon olive oil

  • 2 small red onions

  • 2 cloves garlic minced/finely chopped

  • 1 sweet potato chunked

  • 3 carrots diced

  • 1 pepper chopped

  • 400 grams (15 ounces) kidney beans drained

  • 400 grams (15 ounces) chickpeas (or mixed beans) drained

  • 400 grams (15 ounces) chopped tin of tomatoes

  • 250 millilitres (8,5 fluid ounce) water

  • 1 packet Chilli Con Carne Mix

COOKING INSTRUCTIONS

  • 1 In a large pan, heat up the olive oil. Add the garlic and onions and cook until softened
  • 2 Add the rest of the vegetables and cook for 5 minutes
  • 3 Add the beans, tomatoes, water and Schwartz Chilli Con Carne mix and mix together until the are all mixed in
  • 4 Bring to the boil and then simmer for half an hour until all the vegetables are cooked
  • 5 Serve with fresh coriander, rice, nachos and some guacamole
