Here, we show you how vegetables can grow from humble roots to unbelievable meals, so even the most ardent meat eater will be asking for seconds.
A creamy Italian classic gets a rainbow remix with this wonderfully vibrant roasted vegetable risotto. The tangy base is made with white wine and vegetable stock - from there the floor is yours to add all of your favourite vegetables and other toppings. We love using roasted courgettes, peppers and aubergines with a hearty sprinkle of our Roasted Mediterranean Vegetables mix.
These tasty dumplings are brought to life with vanilla brown butter sauce, baby spinach and toasted hazelnuts for an unforgettable main. The slightly sweet, creamy sauce is an explosion of flavour boosted by garlic and rosemary, while toasted hazelnuts add a pleasing texture.
