Roasted vegetable risotto
A creamy Italian classic gets a rainbow remix with this wonderfully vibrant roasted vegetable risotto. The tangy base is made with white wine and vegetable stock - from there the floor is yours to add all of your favourite vegetables and other toppings. We love using roasted courgettes, peppers and aubergines with a hearty sprinkle of our Roasted Mediterranean Vegetables mix.
Sweet and nutty gnocchi
These tasty dumplings are brought to life with vanilla brown butter sauce, baby spinach and toasted hazelnuts for an unforgettable main. The slightly sweet, creamy sauce is an explosion of flavour boosted by garlic and rosemary, while toasted hazelnuts add a pleasing texture. Serve with a generous handful of sharp parmesan to top off this winning combination.
Classic quesadilla
It's time for a fiesta! Whip up this Mexican dish in just a few minutes, packing tortillas full of all of your favourite veggies and plenty of mozzarella for a melty, moreish mouthful. Sweetcorn, onions and red peppers are always a favourite, while red kidney beans add lots of healthy nutrients. Pair these classic quesadillas with creamy guacamole, fresh salsa and a dollop of sour cream.
Tomato and mozzarella aubergines
Think pizza – with a twist! These wonderful stuffed aubergines are packed with rich tomatoes, stringy mozzarella and a shake of our classic Herbes de Provence mix to bring it all together. For extra flavour and texture, cover with garlic breadcrumbs, or serve with crusty bread drizzled with olive oil and balsamic vinegar.

One of the great things about vegetarian cooking is that there's a meat-free alternative to practically every meal. This roasted cumin, chickpea and spinach curry is just as bright and bold as its meat counterparts, seasoned with Korma curry spices, crushed cumin and coriander. We love this hot and hearty curry served with warm naan bread.
