A simple but satisfying recipe, this easy beef stroganoff comes together quickly on busy weeknights. Deliciously creamy and comforting, the garlicky cream sauce with mushrooms and beef can be enjoyed over rice, noodles, or polenta with vegetables for a complete meal.

  • 1 tablespoons olive oil

  • 1 brown onion

  • 4 cloves of garlic, minced

  • 200 grams (7 ounces) chestnut mushrooms, sliced

  • 50 grams (2 ounces) unsalted butter

  • 175 grams (6 ounces) good quality beef stock

  • 1 teaspoon Coarse Ground Black Pepper

  • 125 grams (5 ounces) sour cream

  • 2 teaspoons Dijon mustard

  • 50 millilitres (2 fluid ounce) brandy

  • 675 grams (1.5 pounds) sirloin steak, thinly sliced and fat removed

  • 2 tablespoons Flat Leaf Parsley

  • To Serve:
  • Basmati rice and seasonal green veg of your choice. I like extra mustard on the side!
