Creole-style Chicken with Vegetables
Ingredients
3 tablespoons oil
450 gram (1 pound) boneless, skinless chicken breast, cubed
2 tablespoons Cajun Seasoning
225 gram (8 ounce) tin pineapple slices in juice
350 gram (12 ounce) potatoes, cubed and par-boiled
1 red onion, chopped
100 gram (4 ounce) sweetcorn
1 red pepper, diced
COOKING INSTRUCTIONS
- 1 Heat 1 tbs oil in a frying pan and fry chicken for 3-4 minutes until golden. Add 1 tbs Cajun Seasoning. Cut the pineapple slices into chunks and add to the pan with 2 tbs of the pineapple juice.
- 2 Meanwhile, in a separate frying pan, heat the remaining oil and fry the potatoes and onion until browned. Stir in the remaining Cajun Seasoning, sweetcorn and red pepper and fry for a further 2-3 minutes. Serve the chicken with the pan-fried vegetables.
