Jamaican Jerk Chicken

1 tablespoons olive oil

1 onion, chopped

4 chicken breasts, boneless and skinless

4 teaspoon Jerk Seasoning

1 green pepper, diced

350 gram (12 ounce) sweet potato or butternut squash, peeled and diced

Zest and juice of 1 lemon

3 tablespoons honey

4 tablespoons tomato puree

425 gram tin pineapple chunks in natural juice

225 millilitre (8 fluid ounce) chicken stock

Instructions
- 1 Heat the olive oil and fry the onion for 2-3 minutes, until browned.
- 2 Add the chicken breasts and cook for 2-3 minutes on each side.
- 3 Add the remaining ingredients and bring to the boil, stirring.
- 4 Cover and simmer for 25 minutes, or until the potatoes or squash are tender and the sauce has thickened.
- 5 Serve with rice.
