Jamaican Jerk Chicken & Pineapple is a rich spicy dish with sweet potatoes or butternut squash and green peppers.
Ingredients
  • 1 tablespoons olive oil

  • 1 onion, chopped

  • 4 chicken breasts, boneless and skinless

  • 4 teaspoon Jerk Seasoning

  • 1 green pepper, diced

  • 350 gram (12 ounce) sweet potato or butternut squash, peeled and diced

  • Zest and juice of 1 lemon

  • 3 tablespoons honey

  • 4 tablespoons tomato puree

  • 425 gram tin pineapple chunks in natural juice

  • 225 millilitre (8 fluid ounce) chicken stock

Instructions

  • 1 Heat the olive oil and fry the onion for 2-3 minutes, until browned.
  • 2 Add the chicken breasts and cook for 2-3 minutes on each side.
  • 3 Add the remaining ingredients and bring to the boil, stirring.
  • 4 Cover and simmer for 25 minutes, or until the potatoes or squash are tender and the sauce has thickened.
  • 5 Serve with rice.
