Mouth-watering burgers flavoured with a Piri Piri Herb & Spice Blend combining Crushed Chillies, Garlic, orange, lemon, Paprika and Coriander Seed. Grilled to perfection and served in rustic rolls with a refreshing pineapple relish. Great served with seasoned vegetable chips to complete the meal.
Ingredients
PIRI PIRI BURGERS:
450 gram (1 pound) turkey, chicken or pork mince
1 bunch spring onions, finely sliced
1 egg yolk
3 tablespoons Piri Piri Seasoning
Zest and juice of 1 lemon
PINEAPPLE RELISH:
225 gram (8 ounce) tin pineapple chunks, drained and diced
1 red pepper, diced
2 tablespoons extra-virgin olive oil
4 rustic rolls (tiger or ciabatta)
Rocket leaves to serve
COOKING INSTRUCTIONS
- 1 Place the mince in a large bowl, add ½ the spring onions, the egg yolk, 2½ tbs Perfect Shake Piri Piri Herb & Spice Blend and the lemon zest. Combine the ingredients together with your hands and form into 4 burgers. Cover and refrigerate for at least 30 minutes, or until ready to cook.
- 2 Meanwhile, to make the salsa, mix together the pineapple, red pepper, remaining Perfect Shake Piri Piri Herb & Spice Blend, remaining spring onions, lemon juice and olive oil.
- 3 Pre-heat the grill (or barbecue) to a medium-heat and cook the burgers for 8-10 minutes, turn and cook for a further 8-10 minutes. Ensure the burgers are piping hot and cooked throughout before serving.
- 4 Serve the burgers in rolls with rocket leaves and topped with the pineapple salsa. Delicious served with seasoned vegetable chips.
