Slow Cooker Chicken Curry Bunny Chow

1 onion, finely chopped

1 red pepper, chopped

450 grams potatoes, chopped

450 grams chicken breast, chopped

1 sachet Slow Cookers Chicken Curry Mix

400 grams tin chopped tomatoes

175 grams fresh spinach

4 crusty bread rolls, hollowed

1/2 red onion, finely chopped

2 tomatoes, finely chopped

4 tablespoons natural yogurt

Instructions
- 1 Place the onion, pepper, potatoes and chicken into your slow cooker pot.
- 2 Mix the sachet contents with the chopped tomatoes, add to the slow cooker pot and stir everything together.
- 3 Cover and cook for 4 hours on HIGH or 8 hours on LOW, or until the meat is tender and cooked through. (Keep covered during cooking. Cooking times vary between slow cooker models).
- 4 Remove the lid, stir the spinach through and stand for 5 minutes before serving.
- 5 To serve, divide the curry between the hollowed bread rolls, and garnish with red onion, tomato and yogurt to finish.
