  • 125 grams (5 oz) salted butter, softened

  • 75 grams (3 oz) soft brown sugar

  • 2 medium free-range eggs

  • 175 grams (6 oz) plain flour

  • 2 teaspoons baking powder

  • 4 tablespoons milk

  • 120 grams (5 oz) marmalade

  • 50 grams (2 oz) honey

  • 1 teaspoon mixed spice

  • 1 teaspoon Ground Ginger

  • 1 teaspoon cinnamon

  • 30 grams (1 oz) candied peel


  • 1 1. Preheat the oven to 180C/160C fan. Grease and line a 2lb loaf tin.
  • 2 2. Cream together the butter and sugar, beat in the eggs, flour, baking powder, milk, half of marmalade, honey and spices.
  • 3 3. Spoon the mixture into the prepared loaf tin and bake in the preheated oven for 45 minutes or until cooked through, when skewer inserted in the middle of it comes out clean.
  • 4 4. While the cake is cooling in its tin, heat the remaining marmalade in a small pan over a medium heat until melted, and brush over the top of the cake. Scatter over the candied peel. Leave the cake to cool completely in the tin then remove and serve.
