  • 25 gram (1 ounce) margarine or softened butter

  • 1 medium egg

  • 25 gram (1 ounce) caster sugar

  • 25 gram (1 ounce) self-raising flour

  • 1 tablespoons cocoa powder

  • 1/4 teaspoon baking powder

  • 1/4 teaspoon Ground Allspice

  • 1/4 teaspoon Cinnamon Ground

  • Zest and juice of 1 orange

  • For the Sauce:

  • 1 tablespoons cocoa powder

  • 25 gram (1 ounce) soft brown sugar

  • 50 millilitre (2 fluid ounce) water

  • Remaining orange juice

Instructions

  • 1 Pre-heat the oven to 190°C, 375°F, Gas Mark 5.
  • 2 Whisk together the margarine, egg, caster sugar, flour, 1 tbsp cocoa powder, baking powder, Spices, orange zest and 1 tbs orange juice. Mix until smooth and glossy. Divide the mixture evenly into 2 ramekins.
  • 3 Pour the remaining orange juice, water, cocoa powder and brown sugar in a small saucepan. Bring to the boil, stirring continuously. Pour evenly over the 2 sponge mixtures and bake for 20 minutes until risen and firm.
