Chocolate and Orange Sponge

  • Pre-heat the oven to 190°C, 375°F, Gas Mark 5.

  • Whisk together the margarine, egg, caster sugar, flour, 1 tbsp cocoa powder, baking powder, Spices, orange zest and 1 tbs orange juice. Mix until smooth and glossy. Divide the mixture evenly into 2 ramekins.

  • Pour the remaining orange juice, water, cocoa powder and brown sugar in a small saucepan. Bring to the boil, stirring continuously. Pour evenly over the 2 sponge mixtures and bake for 20 minutes until risen and firm.
