Valentine Mousse (Chocolate & Vanilla)

  • Melt the plain chocolate in a small bowl over a pan of hot water. Cut two 15cm (6") circles of baking parchment. Divide the chocolate between the two circles and spread the chocolate out evenly to the edge. Place the chocolate circles over two upturned glasses in the refrigerator and leave until set. Peel away the paper and place on plates.

  • Slit the Vanilla Pod and scrape out the seeds. Place the white chocolate and vanilla seeds in a small bowl over a pan of hot water and allow to melt.

  • Meanwhile, whisk the cream until firm, stir in the white chocolate and Grand Marnier. Allow to cool before spooning in the centre of the plain chocolate cups.
