A delicously light, soft and creamy chocolate mousse delicately spiced for a luxurious flavour.
  • 100 gram (4 ounce) good quality plain chocolate, broken into pieces

  • 20 gram (1 ounce) unsalted butter

  • 225 gram (8 ounce) Greek natural yoghurt

  • 25 gram (1 ounce) caster sugar

  • 1 tablespoons brandy

  • 1 pinch Ground Allspice

  • 1 pinch Ground Ginger

  • 1 pinch Cinnamon Ground

  • 75 millilitre (3 fluid ounce) carton double cream

  • 1 Gently melt the chocolate and butter together in a heatproof bowl set over a pan of simmering water.
  • 2 In a large bowl, stir together the yoghurt, sugar, brandy and spices. Slowly pour the melted chocolate mixture into the bowl and stir thoroughly until smooth.
  • 3 Softly whip the double cream and fold it into the chocolate mixture. Spoon into 4 glass containers and chill for 1 hour before serving. Decorate with chocolate curls.
