  • 125 millilitres (4 fluid ounce) honey

  • 1 tablespoon Ground Nutmeg

  • 1 tablespoon Ground Ginger

  • 3 Whole Star Anise

  • 600 millilitre (1 pint) pomegranate juice

  • 200 millilitre (7 fluid ounce) orange juice

  • juice of 2 lemons

  • plenty of ice

  • 500 millilitres (17 fluid ounce) soda water

  • 1 Very gently heat honey until it is runny liquid.
  • 2 Combine with Nutmeg, Ginger and Star Anise.
  • 3 Stir and leave for 30 minutes to allow the flavours to infuse.
