Lemon Blanc Cocktail

Treat your mum to a lie-in while you prepare Mother’s Day brunch! There’s nothing quite like being surprised by a magical spread just for you – and we all love a cheeky morning tipple on special days of the year.

Our delicious Lemon Blanc cocktail is the perfect end to a long meal. Infused with thyme syrup, a subtle herbal note brings new life to the citrusy gin flavours, and makes for a light and refreshing palate cleanser. To serve, slide a slice of lemon around the rim and dip it in sugar, then simply twist slices of peel to garnish.

  • For the Lemon Thyme Syrup, mix sugar and water in a small saucepan and bring to the boil. Add lemon thyme and simmer for 5 minutes. Remove from heat and leave to cool for 10 minutes, stirring occasionally to completely dissolve sugar. Strain. Cover and refrigerate until well chilled.

  • Heat milk and cream with the Vanilla Pod for 2 minutes and allow to cool.

  • Fill a shaker half full with cracked ice. Add all ingredients, shake until well mixed and chilled, then strain into 3 cocktail glasses. Serve with or without ice and garnish with lemon twists.

Cooking tip

Cook’s Notes: If fresh lemon thyme is unavailable, substitute 2 teaspoons Schwartz Thyme Leaves. If Meyer lemon juice is unavailable, use 3 tablespoons lemon juice and 1 tablespoon orange juice for each cocktail shaker.
