Treat your mum to a lie-in while you prepare Mother’s Day brunch! There’s nothing quite like being surprised by a magical spread just for you – and we all love a cheeky morning tipple on special days of the year.
Our delicious Lemon Blanc cocktail is the perfect end to a long meal. Infused with thyme syrup, a subtle herbal note brings new life to the citrusy gin flavours, and makes for a light and refreshing palate cleanser. To serve, slide a slice of lemon around the rim and dip it in sugar, then simply twist slices of peel to garnish.
For the Lemon Thyme Syrup, mix sugar and water in a small saucepan and bring to the boil. Add lemon thyme and simmer for 5 minutes. Remove from heat and leave to cool for 10 minutes, stirring occasionally to completely dissolve sugar. Strain. Cover and refrigerate until well chilled.
Heat milk and cream with the Vanilla Pod for 2 minutes and allow to cool.
Fill a shaker half full with cracked ice. Add all ingredients, shake until well mixed and chilled, then strain into 3 cocktail glasses. Serve with or without ice and garnish with lemon twists.
Cook’s Notes: If fresh lemon thyme is unavailable, substitute 2 teaspoons Schwartz Thyme Leaves. If Meyer lemon juice is unavailable, use 3 tablespoons lemon juice and 1 tablespoon orange juice for each cocktail shaker.
