Heat 1 tbs olive oil in a pan, fry the onions for 4-5 minutes on a medium-high heat. Add the tomatoes and Garlic and cook for 10 minutes. Allow to cool.
Beat the eggs in a large bowl. Add the cheese, Curry Powder and Nutmeg, season to taste. Stir in the tomato mixture.
Heat the remaining oil in a large frying pan and pour in the egg mixture, stirring until it begins to set. Continue to cook, for about 6-10 minutes, according to taste. Sprinkle with Parsley and serve immediately.
