  • Pre-heat the oven to 200°C, 400°F, Gas Mark 6.

  • Roll out the pastry and line a 20.5cm (8") flan ring. Chill. Bake blind for 15 minutes.

  • Meanwhile, blend eggs into the sauce, stir in Tarragon, salmon and seasoning. Arrange broccoli over pastry case and pour over the sauce. Cook for 40-45 minutes or until golden and set.
