  • 2 carrots

  • 2 courgettes

  • 150 gram (6 ounce) smoked salmon, cut into strips

  • For the dressing:

  • 4 tablespoons olive oil

  • 2 tablespoons white wine vinegar

  • 2 teaspoon wholegrain mustard

  • 1/2 teaspoon Dried Dill

  • 2 teaspoon honey

  • Salt and Ground Black Pepper

Instructions

  • 1 Using a vegetable peeler, slice the carrot and courgette into ribbons. Place in a bowl with the salmon.
  • 2 Mix all the dressing ingredients together and stir into the salmon. Cover and marinate for 30 minutes.
  • 3 Serve with melba toast.
