Ingredients
2 carrots
2 courgettes
150 gram (6 ounce) smoked salmon, cut into strips
For the dressing:
4 tablespoons olive oil
2 tablespoons white wine vinegar
2 teaspoon wholegrain mustard
1/2 teaspoon Dried Dill
2 teaspoon honey
Salt and Ground Black Pepper
COOKING INSTRUCTIONS
- 1 Using a vegetable peeler, slice the carrot and courgette into ribbons. Place in a bowl with the salmon.
- 2 Mix all the dressing ingredients together and stir into the salmon. Cover and marinate for 30 minutes.
- 3 Serve with melba toast.
