Smoked Salmon with Vegetable Ribbons

Smoked Salmon always makes even the simplest of dishes seem a little indulgent – and this great-tasting salad is no different.

Simply put all the ingredients in a bowl, leave to marinate for 30 minutes and serve with an accompaniment of your choice. What could be easier?

  • Using a vegetable peeler, slice the carrot and courgette into ribbons. Place in a bowl with the salmon.

  • Mix all the dressing ingredients together and stir into the salmon. Cover and marinate for 30 minutes.

  • Serve with melba toast.
