Thai Salmon Fish Cakes
Ingredients
225 gram (8 ounce) mashed potato
200 gram (7 ounce) tin salmon, drained, bones and skin removed and flaked
2 teaspoon lemon juice
1/4 teaspoon Garlic Granules
1 tablespoons Coriander Leaf
1/2 teaspoon Ground Ginger
large pinch Cayenne Chilli Pepper
15 gram (1/2 ounce) creamed coconut, dissolved in 2 tbs boiling water
Salt
1 medium egg, beaten
75 gram (3 ounce) fresh breadcrumbs
3 tablespoons oil
COOKING INSTRUCTIONS
- 1 Mix together the mashed potato, salmon, lemon juice, Garlic Granules, Coriander Leaf, Ginger, Cayenne Pepper, creamed coconut, salt and Pepper.
- 2 Form the mixture into eight cakes. Dip in beaten egg and then breadcrumbs.
- 3 Fry in hot oil until brown and crispy.
