Thai Spiced Prawns

1 tablespoons oil

1 small onion, thinly sliced

½ red pepper, thinly sliced

175 gram (6 ounce) broccoli florets

3 teaspoon Thai 7 Spice

350 gram (12 ounce) large cooked prawns, defrosted

2 tablespoons sherry

1 teaspoon cornflour
-
2 teaspoon lemon juice

1 teaspoon clear honey
-
75 gram (3 ounce) cashew nuts

Instructions
- 1 Heat the oil in a large pan or wok. Add the onion, red pepper and broccoli and stir fry for 3-4 minutes. Add the Perfect Shake Thai 7 Spice Special Blend and cook for a further minute.
- 2 Stir in the prawns, sherry (blended with the cornflour, lemon juice and honey) and cashew nuts. Stir fry for another couple of minutes until thickened.
- 3 Serve on a bed of rice.
