Weekday salads don’t always have to be the same with this nourishing Vegan Detox Salad with Ginger and Turmeric Dressing. You only need 10 minutes to prepare this light and super healthy salad, with 14 detoxifying and health boosting ingredients. Schwartz Ground Ginger and Schwartz Ground Turmeric elevates the salad dressing and provides a fresh flavour with a light hint of spice.

It’s flexible, too. Simply swap out ingredients for other vegetables (other detoxing ingredients such as cauliflower, spinach, beetroot and almonds could all work) to make it just how you like it. The dressing stores for 2 weeks in the fridge, so you could plan ahead and simply double or triple the recipe to keep you going (we’d still recommend making the salad, though).

Instructions

    1. Blend together the ingredients for the dressing in a small blender and set aside.

  • 2

    2. Finely chop the kale and place it in a large salad bowl along with 1 teaspoon of olive oil and salt. Gently massage the kale between your fingers for 2-3 minutes until the kale is darker, tender, and shiny. (This step is important. It breaks down the toughness and bitterness and brings out the sweetness of the kale).

    3. Add the remaining salad ingredients and toss together with the Schwartz Ginger and Turmeric Dressing. Serve.
