Chinese 5 Spice Noodles

2 tablespoons toasted sesame oil

1 onion, finely sliced

5 spring onions, diagonally sliced

100 gram (4 ounce) chestnut mushrooms, finely sliced

350 gram (12 ounce) large raw prawns, peeled

225 gram (8 ounce) fine egg thread noodles, cooked and drained

4 tablespoons light soy sauce

2 tablespoons Chinese 5 Spice

Instructions
- 1 Heat the oil in the wok and add the onion. Stir fry for 2 minutes. Toss in most of the spring onions, all of the chestnut mushrooms and the prawns. Add a splash of water to the wok and stir fry for 2 minutes.
- 2 Add the cooked and drained noodles and toss the ingredients over a high heat for 3 minutes, until the prawns are piping hot and cooked through. Stir in the soy sauce and Chinese 5 Spice Seasoning. Toss well and serve garnished with the reserved spring onions.
