Fruity Curried Rice

225 gram (8 ounce) rice

½ teaspoon Turmeric Powder

½ teaspoon Sea Salt

2 tablespoons oil

2 teaspoon Medium Curry Powder

1 green pepper, diced

50 gram (2 ounce) sultanas

50 gram (2 ounce) ready to eat dried apricots, chopped

50 gram (2 ounce) salted peanuts

Instructions
- 1 Cook the rice, Turmeric and Salt in 600ml (1 pint) boiling water for 10-12 minutes. Drain and rinse with boiling water.
- 2 Heat the oil in a frying pan and fry the remaining ingredients for 2-3 minutes. Add the rice and heat through.
- 3 Serve either hot or cold as a salad.
