  • 225 gram (8 ounce) rice

  • ½ teaspoon Turmeric Powder

  • ½ teaspoon Sea Salt

  • 2 tablespoons oil

  • 2 teaspoon Medium Curry Powder

  • 1 green pepper, diced

  • 50 gram (2 ounce) sultanas

  • 50 gram (2 ounce) ready to eat dried apricots, chopped

  • 50 gram (2 ounce) salted peanuts

Instructions

  • 1 Cook the rice, Turmeric and Salt in 600ml (1 pint) boiling water for 10-12 minutes. Drain and rinse with boiling water.
  • 2 Heat the oil in a frying pan and fry the remaining ingredients for 2-3 minutes. Add the rice and heat through.
  • 3 Serve either hot or cold as a salad.
