Spicy Chicken Tagliatelle

4 tablespoons olive oil

Zest and juice of 2 lemons

3 tablespoons Spicy Italian Seasoning

2 large chicken breasts, thinly sliced

1 small red onion, sliced

75 gram (3 ounce) pancetta cubes

2 courgettes, grated (excess water removed)

325 gram (11 ounce) tagliatelle, cooked and drained

Instructions
- 1 Heat a frying pan over a high-heat, then add the chicken and marinade. Cook for 3-4 minutes, stirring occasionally. Add the onion and pancetta and cook for a further 3-4 minutes, until the chicken is cooked through.
- 2 Blend the olive oil, juice of 1 lemon and 1 tbs Spicy Italian Seasoning together in a bowl. Add the chicken, cover and leave to marinade for 30 minutes, or for best results overnight in the refrigerator.
- 3 Add the courgettes, lemon zest, remaining juice and remaining Spicy Italian Seasoning all to the pan. Cook for 1-2 minutes to heat through. Add the cooked tagliatelle and toss gently to combine all the flavours.
- 4 Serve drizzled with extra-virgin olive oil, garlic bread and rocket.
