Spicy Thai Noodles

225 gram (8 ounce) egg noodles

1 tablespoons oil

1 red pepper, finely diced

1 bunch spring onions, chopped

1/2 teaspoon Minced Garlic

1/4 teaspoon Chilli Flakes

1 tablespoons Sesame Seed

2 teaspoon Coriander Leaf

2 teaspoon lemon juice

3 tablespoons crunchy peanut butter

2 tablespoons light soy sauce

Instructions
- 1 Cook the noodles according to pack instructions. Drain.
- 2 Heat the oil in the saucepan and fry the pepper and spring onion until softened. Add the Garlic, Chillies, Sesame Seeds and Coriander and fry gently for 1-2 minutes. Add the remaining ingredients with 150ml (1/4 pint) water and bring to the boil.
- 3 Stir in the noodles until evenly coated and heat through. Serve immediately.
