  • 225 gram (8 ounce) egg noodles

  • 1 tablespoons oil

  • 1 red pepper, finely diced

  • 1 bunch spring onions, chopped

  • 1/2 teaspoon Minced Garlic

  • 1/4 teaspoon Chilli Flakes

  • 1 tablespoons Sesame Seed

  • 2 teaspoon Coriander Leaf

  • 2 teaspoon lemon juice

  • 3 tablespoons crunchy peanut butter

  • 2 tablespoons light soy sauce

Instructions

  • 1 Cook the noodles according to pack instructions. Drain.
  • 2 Heat the oil in the saucepan and fry the pepper and spring onion until softened. Add the Garlic, Chillies, Sesame Seeds and Coriander and fry gently for 1-2 minutes. Add the remaining ingredients with 150ml (1/4 pint) water and bring to the boil.
  • 3 Stir in the noodles until evenly coated and heat through. Serve immediately.
