A classic Italian-style pasta sauce with Garlic, sun-dried tomatoes, olives and herbs. Delicious enjoyed alfresco in the summer.
Ingredients
1 tablespoons olive oil
1 onion, chopped
400 gram tin chopped tomatoes
2 tablespoons Garlic Italian Seasoning
2 tablespoons tomato purée
1 teaspoon sugar
150 millilitre (¼ pint) vegetable stock or water
100 gram (4 ounce) pitted black olives, halved
100 gram (4 ounce) sun-dried tomatoes in olive oil, drained and sliced
450 gram (1 pound) fresh pappardelle or tagliatelle
50 gram (2 ounce) Parmesan cheese, grated
COOKING INSTRUCTIONS
- 1 Toss the pasta into the sauce and transfer to large pasta bowls to serve. Sprinkle with the Parmesan cheese.
- 2 Heat the oil in a large deep frying pan and fry the onion, until softened.
- 3 Stir in the chopped tomatoes, Perfect Shake Garlic Italian Special Blend, tomato purée, sugar, stock, olives and sun-dried tomatoes. Bring to the boil and then reduce the heat, cover and leave to simmer for 15-20 minutes, or until the sauce has reduced. Stir occasionally, as necessary.
- 4 Meanwhile, cook the pasta according to the packet instructions, drain and set aside.
