Sausage & Cannellini Bean Casserole

8 pork sausages

1 tablespoon olive oil

1 red onion, finely diced

1 red pepper, finely diced

2 celery sticks, finely diced

900 grams (2 bags) cannellini beans, drained and washed

400 grams (14 ounces) chopped tomatoes

2 tablespoons tomato purée

1 pack Sausage Casserole Recipe Mix

275 millilitres (9 fluid ounce) water

Instructions
- 1 Pre-heat the oven to 180°C, 350°F, Gas Mark 4. Place sausages on a baking tray and bake in the oven for 10 mins.
- 2 Meanwhile, heat oil in a large sauté pan, add onions, peppers and celery, sauté vegetables until soft.
- 3 Transfer to casserole dish and add beans, chopped tomatoes and tomato purée. Stir in the Schwartz Sausage Casserole Recipe Mix along with the water.
- 4 Add the cooked sausages to the casserole dish. Cook in the oven for a further 20 mins.
- 5 Serve with some delicious seasonal vegetables
