Italian Mixed Beans with Bacon is a delicious and nourishing dish that can be left to bake in the oven.
  • 1 tablespoons oil

  • 1 onion, chopped

  • 100 gram (4 ounce) celery, sliced

  • 100 gram (4 ounce) leeks, sliced

  • 100 gram (4 ounce) smoked back bacon, chopped

  • 2 teaspoon Garlic Granules

  • 2 teaspoon Italian Herb Mix

  • 2 x 440g (15oz) tins mixed beans, drained and rinsed

  • 400 gram (14 ounce) tin cherry tomatoes, or chopped tomatoes

  • 1 vegetable stock cube

  • 100 gram (4 ounce) wholemeal breadcrumbs


  • 1 Heat the oil in a large saucepan and fry the vegetables, bacon and Garlic Granules until softened. Stir in the Italian Herb Seasoning, beans, tomatoes and stock cube. Heat until the stock cube has dissolved. Transfer to an ovenproof casserole dish, sprinkle the breadcrumbs on top and bake for 45 minutes.
  • 2 Pre-heat the oven to 180°C, 350°F, Gas Mark 4.
