Pinoy Pork BBQ with Green Mango Slaw

Green Mango Slaw:

2 large green (unripe) mangos, peeled, seeded and cut into thin strips

100 gram (4 ounce) cashews, chopped

1 red onion, finely chopped

2 tablespoons Banana Ketchup

1 teaspoon Coriander Leaf

1 lime, juiced

1 Jalapeño chilli, finely chopped

1/2 teaspoon Sea Salt

1/4 teaspoon Garlic Granules

1/8 teaspoon Cayenne Chilli Pepper

Pinoy Pork BBQ:
-
450 gram (1 pound) pork tenderloin
-
125 millilitre (4 fluid ounce) banana ketchup
-
2 tablespoons soy sauce
-
25 gram (1 ounce) sugar
-
1 lime, juiced
-
1/4 teaspoon Chilli Flakes
-
1 teaspoon Garlic Granules
-
1 teaspoon Smoked Paprika
-
1/4 teaspoon Coarse Ground Black Pepper

Instructions
- 1 For the Slaw, mix all the ingredients together in a medium bowl. Cover and refrigerate until ready to serve.
- 2 For the Pork BBQ, cut pork in thick strips. Mix the remaining ingredients in a small bowl until well blended. Place the pork in a large re-sealable plastic bag. Add marinade and coat well.
- 3 Refrigerate for one hour. Then remove the pork from the marinade and thread the pork onto skewers. Discard any remaining marinade.
- 4 Grill the skewers over medium-high heat 3 minutes per side, or until pork is cooked through. Serve skewers with Green Mango Slaw.
