Spicy Sausage Casserole

2 tablespoons oil

225 gram (8 ounce) onion, sliced

2 sticks celery, sliced

1/2 red pepper, sliced

350 gram (12 ounce) spicy sausage, sliced

1/4 teaspoon Garlic Granules

150 millilitre (1/4 pint) chicken stock

400 gram (14 ounce) tin tomatoes

2 tablespoons tomato purée

400 gram (14 ounce) tin kidney beans, drained and rinsed

1 teaspoon brown sugar

1 teaspoon Caraway Seeds

1 teaspoon Paprika

Salt and Pepper

2 tablespoons single or soured cream

Instructions
- 1 Heat the oil in a large pan and fry the onion, celery and red pepper until softened. Add the spicy sausage and Garlic Granules and fry for another 1-2 minutes.
- 2 Add the stock, tomatoes, tomato purée, kidney beans, brown sugar, Caraway Seeds, Paprika, salt and pepper. Bring to the boil, cover and simmer for 20-30 minutes. Stir in the cream to serve.
