  • 2 tablespoons oil

  • 225 gram (8 ounce) onion, sliced

  • 2 sticks celery, sliced

  • 1/2 red pepper, sliced

  • 350 gram (12 ounce) spicy sausage, sliced

  • 1/4 teaspoon Garlic Granules

  • 150 millilitre (1/4 pint) chicken stock

  • 400 gram (14 ounce) tin tomatoes

  • 2 tablespoons tomato purée

  • 400 gram (14 ounce) tin kidney beans, drained and rinsed

  • 1 teaspoon brown sugar

  • 1 teaspoon Caraway Seeds

  • 1 teaspoon Paprika

  • Salt and Pepper

  • 2 tablespoons single or soured cream

Instructions

  • 1 Heat the oil in a large pan and fry the onion, celery and red pepper until softened. Add the spicy sausage and Garlic Granules and fry for another 1-2 minutes.
  • 2 Add the stock, tomatoes, tomato purée, kidney beans, brown sugar, Caraway Seeds, Paprika, salt and pepper. Bring to the boil, cover and simmer for 20-30 minutes. Stir in the cream to serve.
