Mediterranean Topping for Cod

1 tablespoons olive oil

1 small onion, chopped

1 red pepper, chopped

225 gram (8 ounce) tin chopped tomatoes

75 gram (3 ounce) black olives, chopped

2 tablespoons Spicy Italian Seasoning

1 teaspoon sugar

4 x 175g (6 ounce) cod fillets, skinned

Instructions
- 1 Pre–heat the oven to 200°C, 400°F, Gas Mark 6.
- 2 Heat the oil and fry the onion and pepper until soft. Add the tomatoes, olives, Perfect Shake Spicy Italian Special Blend and sugar and simmer for 15 minutes, until thickened and reduced.
- 3 Place the cod on a lightly greased baking sheet and spoon the tomato mixture evenly over the fillets. Bake for 20–25 minutes or until cooked through.
- 4 Serve on a bed of roasted vegetables.
