Delicious cod fillets simmered in a rich tomato sauce with Garlic, white wine, olives, Saffron, Paprika, Basil and a hint of Chilli. Ideal served with diced roasted potatoes and green beans for a quick and easy mid-week meal.
  • 2 teaspoon sugar

  • 1 teaspoon Dried Basil

  • 450 gram (1 pound) cod fillet, skin on is best

  • Schwartz Sea Salt and Black Pepper to season

  • Parsley to garnish

  • 1 tablespoons olive oil

  • 1 onion, chopped

  • 2 teaspoon Garlic Granules

  • 150 millilitre (¼ pint) white wine

  • 400 gram tin chopped tomatoes

  • 200 millilitre (7 fluid ounce) chicken stock

  • 50 gram (2 ounce) green olives, pitted

  • pinch Saffron Spice

  • 2 tablespoons Paprika

  • ½ teaspoon Chilli Flakes

  • 1 red pepper, chopped

  • 1 Heat the olive oil in a large pan. Add the onion and Garlic Granules and fry for 3–4 minutes or until softened.
  • 2 Add the wine, simmer for 1 minute then add the remaining ingredients, reserving the fish, season to taste. Heat through until the sauce begins to simmer. Reduce the sauce slightly to thicken if desired.
  • 3 Add the fish, cover the pan and simmer for 5 minutes or until the fish is cooked through.
  • 4 Garnish with Parsley to serve.
