2 teaspoon sugar

1 teaspoon Dried Basil

450 gram (1 pound) cod fillet, skin on is best

Schwartz Sea Salt and Black Pepper to season

Parsley to garnish

1 tablespoons olive oil

1 onion, chopped

2 teaspoon Garlic Granules

150 millilitre (¼ pint) white wine
-
400 gram tin chopped tomatoes

200 millilitre (7 fluid ounce) chicken stock

50 gram (2 ounce) green olives, pitted

pinch Saffron Spice

2 tablespoons Paprika

½ teaspoon Chilli Flakes

1 red pepper, chopped

Instructions
- 1 Heat the olive oil in a large pan. Add the onion and Garlic Granules and fry for 3–4 minutes or until softened.
- 2 Add the wine, simmer for 1 minute then add the remaining ingredients, reserving the fish, season to taste. Heat through until the sauce begins to simmer. Reduce the sauce slightly to thicken if desired.
- 3 Add the fish, cover the pan and simmer for 5 minutes or until the fish is cooked through.
- 4 Garnish with Parsley to serve.
