Pre-heat the oven to 200°C, 400°F, Gas Mark 6.
Combine the olive oil, Minced Garlic, Italian Herb Seasoning and lemon juice and zest in a bowl.
Place the cod fillets into an oven proof dish and pour over the herb infused oil. Allow to marinate for 10 15 minutes.
Bake in the oven for 15 minutes, or until the fish is cooked through. Serve with a green leaf salad.
