Herby Baked Cod

  • Pre-heat the oven to 200°C, 400°F, Gas Mark 6.

  • Combine the olive oil, Minced Garlic, Italian Herb Seasoning and lemon juice and zest in a bowl.

  • Place the cod fillets into an oven proof dish and pour over the herb infused oil. Allow to marinate for 10 – 15 minutes.

  • Bake in the oven for 15 minutes, or until the fish is cooked through. Serve with a green leaf salad.
