Cajun Sweet Potato Stew

2 tablespoons olive oil

450 grams (1 bag) sweet potatoes, chopped into cubes

1 red onion, chopped

1 red pepper, chopped

1 clove garlic, grated

1 tablespoon Cajun Seasoning

400 grams tin chopped tomatoes

1/2 Tin chickpeas, drained

250 millilitres (7 fluid ounce) vegetable stock

Schwartz Sea Salt & Black Pepper to season

Instructions
- 1 Heat the olive oil in a sauté pan, add the sweet potatoes, onion and pepper and cook until soft. Stir in the grated garlic and cook for a further minute.
- 2 Add the Cajun Seasoning, chopped tomatoes, chickpeas and stock. Simmer on a low to medium heat for another 10 minutes, season to taste with salt and black pepper.
- 3 Serve with crusty bread.
