Heat the olive oil in a sauté pan, add the sweet potatoes, onion and pepper and cook until soft. Stir in the grated garlic and cook for a further minute.
Add the Cajun Seasoning, chopped tomatoes, chickpeas and stock. Simmer on a low to medium heat for another 10 minutes, season to taste with salt and black pepper.
Serve with crusty bread.
