  • 2 tablespoons olive oil

  • 450 grams (1 bag) sweet potatoes, chopped into cubes

  • 1 red onion, chopped

  • 1 red pepper, chopped

  • 1 clove garlic, grated


  • 1 tablespoon Cajun Seasoning

  • 400 grams tin chopped tomatoes

  • 1/2 Tin chickpeas, drained

  • 250 millilitres (7 fluid ounce) vegetable stock

  • Schwartz Sea Salt & Black Pepper to season

Instructions

  • 1 Heat the olive oil in a sauté pan, add the sweet potatoes, onion and pepper and cook until soft. Stir in the grated garlic and cook for a further minute.
  • 2 Add the Cajun Seasoning, chopped tomatoes, chickpeas and stock. Simmer on a low to medium heat for another 10 minutes, season to taste with salt and black pepper.
  • 3 Serve with crusty bread.
