Italian Vegetable & Ham Risotto

3 medium onions, sliced

100 gram (4 ounce) butter

1 carrot, sliced

1 courgette, diagonally sliced

100 gram (4 ounce) button mushrooms, sliced

1 tablespoons Garlic Italian Seasoning

2 teaspoon Dried Basil

150 millilitre (¼ pint) dry white wine

350 gram (12 ounce) risotto rice

1.2 litres hot chicken stock

175 gram (6 ounce) lean ham, cut into chunks

Schwartz Sea Salt and Black Pepper to season

Instructions
- 1 Fry the onions in the butter for 2 minutes. Add the carrots and cook for a further minute, add the courgettes and mushrooms and fry for 2 minutes.
- 2 Add the Perfect Shake Garlic Italian Herb & Spice Blend and Basil, stir and then add the wine and cook on high for 2 minutes.
- 3 Add the rice, stir and cook for 1 minute, add the stock and bring to the boil, then simmer gently for 15 minutes. Add the ham and heat through for 5 minutes. Season to taste and serve.
