Loaded Sriracha fries

  • Peel skin of Maris piper potatoes and cut into the shape of skinny fries, blanch in hot water for 2 mins and then pat dry.

  • Place skinny fries on a baking tray with a sheet of greaseproof paper, and drizzle 1 tbs of oil all of the fries and bake for 15 mins at 160c

  • Once baking drizzle grated cheese on top of fries and put back into the oven for another 5 minutes.

  • Whilst fries are back in the oven mix your sachet of sriracha seasoning with the mayonnaise.

  • Take the fries out of the oven and drizzle the sriracha mayonnaise on top of the fries, sprinkle your sliced spring onions, chillies, and crushed nuts on top of the fries

  • Garnish with a handful of chopped coriander.
