An Indian-style mixed vegetable stir fry
Ingredients
  • 25 gram (1 ounce) butter

  • 1 red onion, sliced

  • 25 gram (1 ounce) unsalted peanuts

  • 1 tablespoons Garam Masala Powder

  • 1 red pepper, sliced

  • 1 carrot, cut into matchsticks

  • 2 courgettes, sliced

  • 2 tablespoons mango chutney

  • Schwartz Sea Salt and Black Pepper to season

Instructions

  • 1 Melt the butter in a large frying pan and fry the onion and peanuts for 3-4 minutes. Stir in the Garam Masala.
  • 2 Add the remaining vegetables and fry for a further 4-5 minutes. Add the mango chutney and heat through. Season to taste. Serve with cooked rice.
