Mixed Vegetable Stir Fry

25 gram (1 ounce) butter

1 red onion, sliced

25 gram (1 ounce) unsalted peanuts

1 tablespoons Garam Masala Powder

1 red pepper, sliced

1 carrot, cut into matchsticks

2 courgettes, sliced

2 tablespoons mango chutney

Schwartz Sea Salt and Black Pepper to season

Instructions
- 1 Melt the butter in a large frying pan and fry the onion and peanuts for 3-4 minutes. Stir in the Garam Masala.
- 2 Add the remaining vegetables and fry for a further 4-5 minutes. Add the mango chutney and heat through. Season to taste. Serve with cooked rice.
