  • Melt the butter in a large frying pan and fry the onion and peanuts for 3-4 minutes. Stir in the Garam Masala.

  • Add the remaining vegetables and fry for a further 4-5 minutes. Add the mango chutney and heat through. Season to taste. Serve with cooked rice.
