Provencale Stuffed Peppers

4 red peppers, halved lengthways

125 gram (5 ounce) bag mozzarella cheese, diced

1 small avocado, diced

1 tomato, chopped

1 tablespoons mango chutney

1 teaspoon Herbes de Provence

½ teaspoon Garlic Granules

2 tablespoons olive oil

Instructions
- 1 Pre-heat the oven to 200°C, 400°F, Gas Mark 6.
- 2 Place the peppers on a baking tray and bake for 10 minutes.
- 3 Blend all the remaining ingredient together in a bowl. Remove the peppers from the oven and fill with the avocado mixture, bake for a further 10 minutes or until the cheese is beginning to melt and the peppers are tender.
