No cosy cuppa in front of the fire would be complete without a delicious biscuit for dunking. Our shortbread recipe is easy to make and provides a hint of cinnamon to ensure even the coldest of winter nights are filled with warmth.

175 gram (6 ounce) butter, room temperature

75 gram (3 ounce) caster sugar

175 gram (6 ounce) plain flour sifted

75 gram (3 ounce) semolina, fine

1 teaspoon Cinnamon Ground

Instructions
- 1 Pre-heat oven to 150°C, 300°F, Gas Mark 2.
- 2 In a bowl cream together the butter and sugar. Gradually mix in the flour, semolina and Cinnamon. Using your hands knead the mixture together to form a dough.
- 3 Line a baking tray with grease proof paper, place your dough into the baking tray and distribute evenly, press into the corners. Prick the dough all-over with a fork.
- 4 Bake in the middle of the oven for 50-55 minutes.
