Classic shortbread flavoured with a hint of warming Cinnamon.
Pre-heat oven to 150°C, 300°F, Gas Mark 2.
In a bowl cream together the butter and sugar. Gradually mix in the flour, semolina and Cinnamon. Using your hands knead the mixture together to form a dough.
Line a baking tray with grease proof paper, place your dough into the baking tray and distribute evenly, press into the corners. Prick the dough all-over with a fork.
Bake in the middle of the oven for 50-55 minutes.
