  • 1 red pepper, quartered

  • 1 yellow pepper, quartered

  • Olive oil

  • 1 ciabatta loaf, cut lengthways

  • 25 gram (1 ounce) olives, halved

  • 1/2 teaspoon Oregano

  • 175 gram (6 ounce) mozzarella cheese, sliced

  • 1/2 teaspoon Onion Salt

Instructions

  • 1 Pre-heat the oven to 200°C, 400°F, Gas Mark 6.
  • 2 Brush peppers with a little oil and place under a pre-heated grill until the skins have browned and softened. Place in a plastic bag to cool.
  • 3 Meanwhile, brush a little oil over the cut surface of the bread, place on a baking tray and bake for 5 minutes.
  • 4 Skin the peppers, slice and mix with the olives and Oregano. Top the bread with mozzarella and then the peppers. Sprinkle over the Onion Salt. Drizzle over some olive oil. Bake for 10-15 minutes.
  • 5 A small French stick can be used instead of ciabatta.
