Remove steak from refrigerator 30 minutes before cooking to allow to come to room temperature. Rub with 2 tsp Cajun Seasoning then set aside. Place a pan over a high heat and once smoking add the black beans, along with the remaining Cajun Seasoning and season to taste, set aside.
In a small bowl combine the onion with the vinegar, sugar and a pinch of salt and set aside. For the salsa in a small bowl combine the tomatoes, coriander, spring onions, half of the olive oil and a pinch of salt. Finally mash the avocado with the lime zest and a pinch of salt and set aside.
Heat a griddle pan over a high heat, drizzle olive oil over the steak and rub in. Cook steak for around 2-3 minutes on each side, then allow to rest whilst you build the burrito.
In the hot griddle pan heat the tortilla wrap for 30 seconds on each side. Smear sour cream at the base of the tortilla, then spoon on an even layer of cooked rice, followed by beans, salsa and avocado. Carefully slice steak into strips and place on top. Sprinkle over cheddar and melt cheese using a blow torch or under a hot grill. Top with the pickled onion slices and serve.
