  • 2 tablespoons oil

  • 450 gram (1 pound) lean stewing steak, cubed

  • 1 medium onion, sliced

  • 3 tablespoons plain flour

  • 300 millilitre (½ pint) beef stock

  • 300 millilitre (½ pint) brown ale

  • 1 Bouquet Garni

  • 1 Bay Leaves

  • ½ teaspoon Dried Thyme

  • 2 teaspoon soft brown sugar

  • ½ teaspoon Sea Salt

  • 2 large carrots, sliced

  • 100 gram (4 ounce) button mushrooms

Instructions

  • 1 Pre-heat the oven to 180C, 350F, Gas Mark 4.
  • 2 Heat the oil in a frying pan and brown the meat and onion. Add the flour and cook for 1 minute, stirring.
  • 3 Blend in the stock and brown ale. Add the Bouquet Garni, Bay Leaf, Thyme, sugar, Salt, carrots and mushrooms. Bring to the boil and transfer to a casserole dish.
  • 4 Cover and cook in the oven for 2-2½ hours or until the meat is tender. Remove the Bouquet Garni and Bay Leaf before serving.
