Carbonade of Beef from scratch

2 tablespoons oil

450 gram (1 pound) lean stewing steak, cubed

1 medium onion, sliced

3 tablespoons plain flour

300 millilitre (½ pint) beef stock

300 millilitre (½ pint) brown ale

½ teaspoon Dried Thyme

2 teaspoon soft brown sugar

½ teaspoon Sea Salt

2 large carrots, sliced

100 gram (4 ounce) button mushrooms

Instructions
- 1 Pre-heat the oven to 180C, 350F, Gas Mark 4.
- 2 Heat the oil in a frying pan and brown the meat and onion. Add the flour and cook for 1 minute, stirring.
- 3 Blend in the stock and brown ale. Add the Bouquet Garni, Bay Leaf, Thyme, sugar, Salt, carrots and mushrooms. Bring to the boil and transfer to a casserole dish.
- 4 Cover and cook in the oven for 2-2½ hours or until the meat is tender. Remove the Bouquet Garni and Bay Leaf before serving.
