A rich and warming beef casserole cooked with tomatoes and olives and seasoned with Paprika, Herbes de Provence and Garlic for great flavour.
Ingredients
  • 2 tablespoons olive oil

  • 450 gram (1 pound) lean stewing steak, diced

  • 2 tablespoons plain flour

  • 450 millilitre (¾ pint) beef stock

  • 3 teaspoon Paprika

  • 2 teaspoon Herbes de Provence

  • ¼ teaspoon Garlic Granules

  • 1 tablespoons tomato purée

  • 200 gram (7 ounce) tin chopped tomatoes

  • 100 gram (4 ounce) black olives, sliced

  • 500 gram sautéed potatoes to serve

  • 300 gram green beans to serve

Instructions

  • 1 Pre-heat the oven to 350°F, 180°C, Gas Mark 4.
  • 2 Heat the oil in a pan and fry the meat until browned. Add the flour and cook for 1 minute, stirring. Blend in the stock and add the Paprika, Herbes de Provence, Garlic Granules, tomato purée, tomatoes and olives. Bring to the boil, stirring.
  • 3 Transfer to a casserole dish, cover and cook in the oven for 1½ to 2 hours or until the meat is tender.
  • 4 Serve with sautéed potatoes and green beans.
